Seafood plays a pivotal role in the cuisine of Italia and our inspiration today comes from the beautiful town of Praiano, perched, overlooking the ocean, on the enchanting Amalfi coast. Freshly caught seabass graces the menus of the town’s most esteemed trattorie, and our chefs have captured the essence of this local delicacy in these delightful ravioloni. Combined with creamy mascarpone cheese and zingy lemon zest - another ingredient characteristic of the Amalfi Coast - the delicate flavour of the seabass is perfectly complemented by these fresh, summer-evoking ingredients, bringing the dish to life.
To truly accentuate the flavour of our squid ink-infused ravioli - and indeed do justice to – its ingredients, we dress the ravioloni in a simple, but beautiful, butter infused with dill (a fabulous pairing for seafood). To finish, we garnish with a scattering of samphire to which the Italians (gorgeously, even poetically) refer to as the ‘asparagus of the sea’. This ending flourish adds a final lingering whisper of the Italian seaside - and at its most beautiful.
